La cucina, per me, è un modo di viaggiare.

Sono cresciuta in un ristorante di famiglia, tra il mare e le montagne. Da bambina guardavo mio padre prendere quello che c'era, un pesce appena pescato, dei funghi raccolti la mattina, e farne un motivo per sedersi tutti insieme. Credo di cucinare ancora per quel momento: quando le persone smettono di guardare il piatto e iniziano a guardarsi. Cucine come quelle del Four Seasons di Firenze e di Maaemo a Oslo mi hanno dato tecnica e disciplina. Dopo gli anni nella ristorazione, ho scelto di lavorare in modo indipendente, oggi come private chef freelance, creando esperienze e collaborazioni su misura.

Il resto l'ho imparato viaggiando. Parto dall'Italia e dal Mediterraneo, dalla stagione e dai piccoli produttori. Poi lascio entrare quello che ho incontrato lungo la strada: un'acidità giapponese, una spezia mediorientale, un profumo del Sud-Est asiatico. Non lo faccio per stupire. Lo faccio solo quando aiuta a raccontare qualcosa. Cerco sempre un legame: con un territorio, attraverso i suoi prodotti. Con un produttore, attraverso la sua storia. Con le persone, attraverso una tavola condivisa.

I grew up in a family-run restaurant, nestled between the sea and the mountains. As a child, I watched my father take whatever was available—freshly caught fish, mushrooms picked that morning—and turn it into a reason for us all to sit down together. I think I still cook for that moment: when people stop looking at their plates and start looking at each other. Kitchens like those at Four Seasons in Florence and Maaemo in Oslo taught me technique and discipline. The rest, I learned by travelling.

I start with Italy and the Mediterranean, with the seasons and the work of small-scale producers. Then I draw on what I’ve encountered along the way: the acidity of Japan, the spices of the Middle East, the aromas of Southeast Asia. I don’t do this to impress. I do it only when it helps tell a story. I’m always looking for a connection: with a region, through its local products; with a producer, through their story; with people, through the simple act of sharing a meal.
